TANZANIA MAFUMBO HIGHLANDS WASHED
Cupping Notes:
Cupping Notes
A beautifully layered cup with a foundation of rich chocolate and caramel sweetness, lifted by the bright, delicate character of golden kiwi and kumquat. The fruit brings a lively, citrus-toned acidity that plays elegantly against the deeper cocoa notes. As the cup cools, the interplay of sweetness and fruit becomes more pronounced, leading to a clean, lingering finish with a lovely sense of balance and finesse.
FARM NOTES:
In Tanzania's Southern Highlands, the rolling landscape of Mbozi is home to generations of smallholder coffee farmers. Around Mafumbo village, families cultivate Bourbon, Kent and locally developed Arabica varieties at elevations averaging 1,600 meters.
The harvest brings together coffee from four neighboring villages, with approximately 300 farmers contributing to a shared washing station in Mafumbo. Ripe cherries are picked by hand and delivered for processing within eight hours, preserving the freshness of the fruit.
Following pulping, the coffee undergoes a 12-hour fermentation with regularly refreshed clean water. The parchment is then washed, carefully sorted through grading channels and spread across raised drying beds, where moisture is monitored until the coffee is ready for milling.
It's a coffee shaped by its highland environment, traditional cultivation and the collective work of a close-knit farming community.
