Rancabali is an evocative expression of Java’s long coffee tradition — a deeply textured and atmospheric cup shaped by the island’s humid mountain climate and distinctive wet-hulled process. While this rustic method is most often associated with Sumatra, the finest examples from Java possess a refinement and composure all their own.

From the first aroma, the coffee reveals dark herbal tones, warm cacao, resinous spice, and earthy sweetness suggestive of palm sugar and blackstrap molasses. The palate is broad and syrup-laden, unfolding with notes of baking chocolate, cacao nibs, brown rice syrup, and forest herbs layered over a deep bass-toned structure that feels both grounding and quietly exotic.

Subtle impressions of pine resin, dried tarragon, marjoram, and polished wood emerge gradually, balanced by restrained bitterness and a long, lingering finish reminiscent of fine dark cocoa. Beneath the rusticity lies surprising clarity — not weathered or woody, but composed, savory, and profoundly comforting.

In espresso, Rancabali becomes especially compelling, producing dense, velvety shots with immense texture and aromatic depth. Dark berries, whole spice, bittersweet chocolate, and herbal nuance converge into a cup of remarkable persistence and gravitas.

A coffee of shadow, earth, and warmth — contemplative, transportive, and unmistakably Indonesian.

Farm Notes

This lot of Rancabali is from a coffee collector named Pak D in Indrigiri, near the Mount Tilu pass. "Collectors" are intermediaries of sorts who buy partly processed coffee and full coffee cherry from coffee small scale farmers and then either process the coffee down to the dried seed/bean themselves, or sell the coffee to larger mills. In this case, the coffee was milled at a site in Ciwidey where they do mostly wet-hulled coffee (aka “giling basah”. Whereas many collectors create large blends of all the coffee they buy, Pak D pays special attention to separating the lots that he buys by region, these smaller lot sizes adding a layer of quality control, not to mention more specific provenance. This lot is from farms in Rancabali District, from villages like Stamplat and Indrigiri, where Pak D is from. Elevation is roughly 1500 to 1700 meters above sea level, and most farms are planted in Ateng and Typica varieties.
