Guatemala Sacchumba Domaine La Sombra
Cupping Notes
A Harmonious Expression of Sweetness and Depth
This lot from La Sombra is a masterful expression of balance, structure, and refined sweetness. The dry fragrance unveils delicate impressions of loose-leaf tea woven into deep molasses tones, underscored by bittersweet cocoa and a whisper of raisins. When infused, the profile expands, revealing a saturated, buttery caramel sweetness, elegantly accented by a touch of blackberry tea.
A coffee of extraordinary textural depth, La Sombra offers a syrupy sweetness that is both profound and complex. A structured acidity lends vibrancy, particularly in the lighter extractions, while the broader profile is enriched by layers of brown sugar, aromatic spice, and caramelized sugars. As the cup evolves, it unfolds with remarkable clarity—nuances of dried apple, cinnamon-laced cocoa powder, and a bright citrus zest adding further dimension to the tasting experience.
The coffee’s body is exceptional, structured yet opulent, its lightly fruited character seamlessly integrated into an overarching framework of deep chocolate tones. The middle and finish are composed of refined drinking cocoa and bittersweet chocolate, subtly lifted by dark plum and a whisper of lemon rind, adding a final flourish of complexity.
A selection of remarkable elegance and persistence, La Sombra captures the very essence of its terroir, offering a cup that is both profoundly sweet and structured, its depth revealing itself with every sip.

A Testament to Dedication and Terroir

This meticulous approach has positioned La Sombra as a farm that not only reflects his passion but also embodies the intrinsic potential of Huehuetenango’s high-altitude terroir.
Supported by his family, Gonzalo chose the name "La Sombra" to honor the farm’s close relationship with the surrounding forested landscape, a nod to the natural harmony in which his coffee thrives. His work extends beyond personal achievement, recognizing that coffee cultivation is not merely a livelihood—it is a legacy that sustains his family and enriches his broader community.
