This heirloom seection unveils potent aromatics and intense fruited characteristics, epitomizing the essence of dry-process Ethiopias. The dry fragrance bursts with berry notes, both dried and cooked, complemented by hints of rustic sugars and intricate floral and herbal aromas. The wet aroma intensifies the berry essence, with fragrant notes of dried strawberry and a luscious sweetness reminiscent of canned fruits. It reveals a pleasing tartness in the fruited flavor profile, adding an acidic brightness often absent in dry-process coffees. Top notes of strawberry, mixed berry compote, mango, and stone fruits, accentuated by a delightful floral layer and a green-herbal rue note that enhances the aromatic allure. Subtle rustic hints, such as sorghum and rice syrups, linger into the finish, alongside faint overripe fruit notes. Overall, delivering well-defined cup flavors characteristic of exceptional dry-process coffees.
Farm Notes:
The coffee comes from small holder coffee farmers in Hambela, a high altitude region that tops out at 2100 meters above sea level. These lots are made up of coffee from several different farmers, most with only a couple hundred coffee trees or less. It’s heirloom coffee and is processed in a nearby town at a privately run wet mill, where they process both washed and natural coffees. This lot underwent several layers of hand picking from the whole coffee cherry to the final milled green coffee in order to achieve "Grade 1" status. These exceptional coffee standards make for a remarkable experience in the cup.
